I've been thinking...  (Yes, I know, that's always a bad sign ;-)

Why don't we run the PLIST through cpp?  Most people can handle a few
#if's and we get the benefit of #include, and #define...  The current
PLIST_SUB stuff could be replaced by -DVERSION=${VERSION} and then it
would just happen automatically...
