I normally suggest homebrew.  If you want a large OEM, I like Gateway
2000.  They tend to use fairly standard parts, or at least used to.

The best suggestion: Ask the vendors you're considering about their
hardware.  Look at the OSs' docs.  The remainder is left as an
exercise to the reader.
