I am by no means a mail server expert, but I do know that there are a
few available that handle IMAP. As for clients, Netscape handles it, as
well as other Open Source mail clients. Fetchmail *does* handle IMAP, so
you can use just about anything for the client end.

Being Open Source software, FreeBSD is ideal for deployment testing.
Install it on one machine (printer or file server) to get familiar with
it. Then try out different mail servers and clients, as well as other
software you may be interested in. If you make a mistake, your users
will complain much less if it is the printer server that crashes instead
of the firewall or mail server.
