Ok... man newfs shed some light on how to prepare a new disk...

newfs -U /dev/mirror/gm0s1
mkdir /mirror
mount /dev/mirror/gm0s1 /mirror

did the trick. It boots ok and it seems to work (gmirror list does 
return something, although it says "DIRTY" which doesn't sound 
excellent...).

I'll read the manual.
