I love the following combo:

Exim as MTA
Dovecot for POP3/POP3S/IMAP/IMAPS
Vexim (http://silverwraith.com/vexim) for web based management
MySQL or PostgreSQL database
Squirrelmail for webmail with vlogin plugin for multihosting.
