The solution is to edit /etc/sysconfig.
Go to the network section and in there you will be able to setup all networking. 
This is actually what sysinstall is supposed to do. 
You will have to reboot after this.

You can also change all of these on the fly without rebooting by using ifconfig,
hostname and some other commands, but I recommend doing the above.

That is probably a good idea :)
There are many problems with sysinstall, but it has become more stable in later releases.
